favorite clean eating meals

Clean eating does not have to be boring!  In fact, I like LOTS of bold flavors and spices, so it’s a win/ win with eating healthy.  Here are 5 of my favorite quick healthy recipes.  They are quick & easy to prepare… and you can replace the protein in each dish, so add to the menu.

 

1. Baked salmon with salad and sweet potatoes.  I use pesto from a jar to top my salmon, then bake at 350 for 15-20 minutes.  Pop sweet potatoes in microwave for 5-8 minutes or bake them for about an hour.  Toss salad and enjoy a healthy & filling meal.

 

2. Anything is a lettuce wrap is fun!  This is my version of PF Chang’s lettuce wraps.  I cook chicken, carrots and onions in EVOO then sauté in BRAGGS Aminios {healthy version of soy sauce} the last few minutes.  In the meantime, thinly slice carrots & cucumbers.  Spoon chicken mixture in lettuce wrap, top with fresh veggies and cilantro and add any additional Braggs or Sriracha sauce you prefer.  This is  a family favorite!

 

3. Sautéed shrimp with asparagus and brown rice {or I have made with quinoa also} If you prep the brown rice in advance or day before, it only takes about 5-10 minutes to prepare this meal.  Otherwise coooking times differ on brown rice.  Again, this meal can take on any flavor you like.  I like Ms. Dash lemon and garlic.  Toss EVOO, seasoning and fresh shrimp in bowl to coat, then saute in hot skillet 3-5 minutes.  Ass fresh garlic to the sautéed shrimp in the pan.  Use equal parts then toss together.  squeeze fresh lemon over top.

 

4. Grilled flank steak over spinach salad with goat cheese.  My husband loves this meal.  Personally, I no longer eat red meat, so I usually sub for grilled fish.  Drizzle pesto or homemade vinaigrette over top and you are done!  I usually grill extra meats over the weekend for easy meal like this one during the week or lunches on the go.

5. I have such a sweet tooth, so coming up with quick healthy desserts is always fun!  Baked pear with walnuts drizzled with organic maple syrup.  Another version I make is chopped green apples baked with crumbled organic granola over top and a drizzle of maple syrup.  Both are naturally sweet and totally cure my sweet tooth!

Quick healthy recipes don’t have to be overly complicated.  All it takes is a little preparation and you are good to go with your health goals!
