Protein Power Waffles

waffleI have been researching paleo recipes and came up with this edited version for Protein Power Waffles of my own.  I love big breakfasts on the weekend with my family… but I try to teach the family to keep it clean.  So this is the best of both worlds. Although I am a ‘dash of this and a dash of that’ kind of cook, I did manage to get an exact recipe for the most yummy power waffles.  You can make with or without the frozen blueberries.  I used them and found it added some moisture and even more deliciousness to the powerFUEL breakfast!  I have even used the waffles to eat as a pre-workout snack to fuel me through a tough workout.  Waffles with a power punch! Eat 30 minutes before working out. Another tip is that I do when I make these is I double the recipe and freeze the leftovers. Enjoy!

Power Protein Waffles

 

Ingredients (Option 1):

  • 4 egg whites + 1 egg
  • 2 scoops vanilla (or chocolate) protein powder (I use shakeology for added nutrition)
  • 1 tbsp almond milk (can add more if too think)
  • 2 tsp cinnamon
  • 1 tbsp almond butter
  • 1 cup frozen blueberries
  • Optional toppings: sliced strawberries, blueberries or bananas & maple syrup

Directions:

  1. Blend all ingredients.
  2. Make waffles in a waffle maker.

Ingredients (Option 2):

  • 1 ripe banana
  • 3 egg whites
  • 1 scoops vanilla (or chocolate) protein (I use shakeology for added nutrition)
  • 2 tsp cinnamon
  • 1 cup oats (blended in handheld mixer)
  • 1 cup frozen blueberries (optional)

Directions:

  1. Mash banana, then blend all ingredients.
  2. Make waffles in a waffle maker.
  3. Optional toppings: sliced strawberries, blueberries or bananas & maple syrup
