Fish Taco Recipe with Pineapple Salsa

Being a southern girl, we love all things spicy, flavorful and if you can wrap it up in a tortilla, even better!  Having three busy & active kiddos, I need quick and healthy meals that everyone will love.  When I plan out our weekly menu, I  know that Tuesdays are Taco Tuesdays!   I love this healthy recipe for Fish Taco Recipe with Pineapple Salsa and it has become a family favorite!  This meal is super easy to make in less than 30 minutes.  I made a delicious pineapple salsa to top on the fish tacos.  Refreshing anytime of the year… especially when paired with a skinny margarita!  Don’t forget an extra squeeze of fresh lime and sliced avocado!  My hubby ate up his tacos before I could add the avocado to this taco! Ha!

PREPARE FISH FOR FISH TACOS:

  • Start with 4-6 fillets of cod or mahi mahi.
  • Sear in pan with 2 tbsp coconut oil.
  • Season with Mrs. Dash chipotle seasoning or your favorite seasonings.
  • Cook each side 3-5 minutes.
  • Fish should be white and firm.

PREPARE PINEAPPLE SALSA FOR FISH TACOS:

  • 1 cup pineapple
  • 1 cup tomatoe
  • 1/4 cup red onion
  • 1/4 cup cilantro
  • 2 Tbsp chopped jalapeno
  • mix with juice of 1 lime.
  • optional 1/2 cup to 1 cup black beans

Fish tacos are best when served in corn tortillas and keeps the recipe clean and healthy.  Layer tortilla, fish then top with pineapple salsa.  Enjoy! Fish Taco Recipe with Pineapple Salsa can also be made for large parties… Just double the batch!  I keep the warm fish under foil and place in a warm oven until ready to serve.
