My Meal Prep for the week begins with planning easy meals to prep for the week then shopping, chopping & cooking up lots of veggies!
Top picture:
Roasted Root Veggies-
Carrots, beets, onions & carrots with EVOO abs chopped herbs.
Bake 450 for about 30-45 minutes. {I like the veggies a lil crispy so bake longer.}
Bottom picture:
Veggie Stir Fry-
Chop any veggies you like. I use zucchini, squash, bell pepper, carrots, onion, broccoli & cauliflower. Fresh mushrooms are nice but could not find this week.
Heat 2-3 T coconut oil hot in wok. The start layering the veggies from toughest to softest. Onions & carrots go in to stir fry first. Salt & pepper then cook approx 5 min. Layer the rest of veggies, leaving bell peppers (mushrooms if using) for the last 5 minutes.
Season w fresh herbs, salt & pepper to taste.
Top with brags aminos & seri ache sauce for delicious Asian flair meal!
Eat alone, or add a grilled lean meat, plus steamed brown rice.
Both freeze well so measure out 1/4 cup brown vice plus 1 healing cup of veggies into individual containers.
