Breakfast is the most important meal of the day. Not just for you, but especially for the kiddos! Eating a healthy breakfast can be done in little amount of time and can also be done on a budget. Here are three of my favorite healthy breakfast recipes in my video but also some other favorites of my family:
1) Yogurt Parfait.
Get creative with your favorite fruit, berries, granola, nuts or seeds to UMPH up the nutrition. Have fun with fancy glasses!
Ingredients:
1 cup nonfat plain Greek yogurt
¼ cup fresh strawberry slices
¼ cup fresh blueberries
½ tsp. raw honey
Preparation:
Place 1/3 yogurt in a tall glass. Top with 1/3 strawberries and 1/3 blueberries. Repeat layers twice. Drizzle with honey.
2) Scrambled Eggs.
Have fun or keep it simple… eggs are nutrition, quick and give your body fuel for a long busy day. Scramble alone or mix in cheese, veggies or layer on an egg sandwich.
3) Healthy Pancakes.
I make my kids yummy pancakes but sneak in Whole Foods with Shakeology and make them Super Healthy! They don’t know the difference! I even make the boys initials (Pierce, Peyton & friend Walker) which they LOVED it!!!
Ingredients:
Heart Smart Bisquick- Double the batch to freeze leftover
Almond milk
Vanilla Shakeology or your favorite vanilla protein powder (make sure it is natural, without aspartame and other harmful ingredients)
egg whites- if it calls for 1 whole egg, I replace w 3 egg whites to double the protein. (2 = 5 egg whites)
Preparation:
Mix all ingredients per package directions. If too thick, add liquid. Cook accordingly. Serve with fresh fruit, organic or low sugar syrup and a smile, knowing you are serving Healthy Pancakes!
