Taco Bar with Brisket Tacos

Brisket tacos and having a taco bar is a crowd pleaser.  I grew up eating lots of meals centered around brisket.  So now that I have my own busy family, I need delicious meals that don’t require me spending all day in the kitchen cooking.  This crockpot brisket taco recipe is to die for!  You can garnish and top it with so many different things, you can literally have unlimited options.  My kids love the pineapple salsa and my husband prefers a bold, spicy pico and traditional lettuce and tomato.  I like everything in between… especially adding avocado!

Brisket tacos are so easy to make.  Just throw all the ingredients into the crockpot the night before, then cook all day.  Shred right before serving.  We often have several families over for get-togethers and a Mexican Theme Dinner is always a crowd pleaser.  Sometimes I set up a “taco bar” that allows kids of all ages to go down the line and assemble their very own taco!  It’s fun to set out all the sides like lettuce, dices tomatoes, traditional salsa, pineapple salsa, cilantro, onions, pico de galo, different styles of cheeses and anything else you prefer.

At your Taco Bar with Brisket Tacos, you can even make the shells a fun option as well offering soft shell whole wheat tortillas, corn tortillas, hard shell tortillas or lettuce wraps for the carb conscious eaters.

Fun Taco Bar with Brisket Tacos

1(3-pound) boneless brisket (or can swap chicken breast or pork is you choose)

10 minced garlic cloves, 2 teaspoons ground cumin, 1 teaspoon dried oregano, 3/4 teaspoon salt, 1/2 teaspoon freshly ground black pepper

3/4 cup orange juice, 2 tablespoons fresh lime juice

2 chipotle chiles canned in adobo sauce, drained and chopped (this is the magic sauce- more or less for a bold spicy flavor!)

20 (6-inch) wheat or corn tortillas, warmed or any tortillas you choose to serve at your Fun Taco Bar with Brisket Tacos

2/3 cup chopped onion & tomatoes

2/3 cup bottled salsa

2/3 cup chopped fresh cilantro

•10 lime wedges & (optional) 2-3 avocados sliced (I add avocado on ALL my Mexican food especially tacos!)

Combine all ingredients and pour over meat in slowcooker. Cook 8 hours.

•About 30 minutes before done, chop tomatoes, onions and slice avocado. Prepare for your Fun Taco Bar with Brisket Tacos.

•Trim meat then shred it for tacos.
