Turkey meatballs & zoodles 


This has to be the best dinner I have had in a long time. Seriously all the flavor, texture & comfort food feel in a healthy version of turkey meatballs & zoodles vs spaghetti & meatballs.

First, I made turkey meatballs using 3 pounds 99% fat free ground turkey, 1 cup seasoned bread crumbs, 1/4 cup katchup, 2 eggs, 4 cloves minced garlic, 1/2 cup chopped sweet onion, 1/2 cup chopped parsley & 2T Italian seasonings. Measure each out in 1/4 cup, roll in ball shape then place on cookie sheet. (Optional- Add 1/2 cup Parmesan shredded cheese). Bakes 350 for 15 -20 minutes. 

Next, I used 2 jars organic garlic & basil spaghetti sauce ( because let’s be real, who has time to make sauce from scratch?!) then put the meatballs in the sauce to marinade & heat up on low for about 25 minutes.  I chopped up fresh mushroom & added to sauce. 

In the meantime, I poured myself a glass of wine and  sliced the zucchini in half, then used a veggie slicer to make “noodle like” strips. I steamed the zoodles in a pot of water for 10 minutes.  

I’ll have to say, this was my first attempt at this turkey meatballs & zoodles… And the verdic… It was a HUGE success! Seriously a delicious meal that my entire family loved! It was filling yet healthy! What?! So yummy!
